MAGICAL MARINADE

March 7, 2016

Spring is in the air.  We are getting some nice warm teaser days here.  Time for chillin and grillin. I thought I would share this amazing marinade recipe with you.  I first had it at a friend's house a couple of years ago and it quickly became a family favorite.  The reason we call it magic marinade is that EVERYONE we serve it to LOVES it (grown ups and kids alike).  We usually use it on chicken but it also tastes great on pork and even steak.  I was wondering if it would taste good on tofu but I haven't tried it. We like to make a big batch of this at the beginning of the week and then use the leftovers all week long (great on salads, especially.)  In this recipe I used about 3 pounds of chicken and you can see there was a lot of marinade so you could probably make up to 4 pounds total.  We like to cut the chicken breasts in half before marinating them. They grill much faster and also absorb the marinade more quickly.

Here is how to do it:

In a nice marinating bowl pour 1 and 1/2 cups of Olive Oil.

Now add your 2 (or to your liking) cloves of garlic.  I run mine through the garlic press but they can just be chopped up a little. Add some salt and pepper to your liking.

Voila!! Here it is with the chicken marinating and absorbing all that yumminess.  Wish you could smell this.  Let it marinate for a few hours (even better overnight!) then grill.  When we were served this for the very first time the chicken was cubed and grilled on skewers with peppers, zucchini, cherry tomatoes and onions.  DE-LISH! Hope you enjoy!

Warmly,

Pam
